| Caribbean Quesadillas 4 eight inch flour tortillas 1 1/3 cups grated jack cheese 1 cup cooked, shredded chicken meat 4 tablespoons NEERA'S Caribbean Salsa 4 scallions, chopped Cilantro leaves for garnish Preheat the broiler. Layer each tortilla with the ingredients, starting with the cheese, then the chicken, then the salsa, finishing with the scallions. Broil until the cheese melts and the edges begin to brown. Remove from broiler and garnish with the cilantro leaves. Slice into wedges and serve. Serves 4. |
